Bacon and Elvers Strudel

40 min.

Ingredients:

  • – 250 g of potato
  • – 250 g smocked bacon
  • – 250 ml cream
  • – 150 g parmesan cheese
  • – 4 smocked elvers
  • – Herbs and flowers sprouts

Preparation:

Cut the potatoes into thin slices- Then, in a tray place a layer of potato, bacon and cream. Alternate the ingredients until you reach the desired thickness.  Finish with the potato and cheese on top. Cook in the oven at 170 ° C for 35 min.

Once baked, square the cake and cut it to the weight of 40 g.

To finish:

Add the herbs and flowers sprouts and the elvers.

Mush With Ham And Chorizo

60 min.

Ingredients:

  • – 200 g of bacon
  • –  200 g of fresh chorizo
  • – 1g of sweet pepper
  • – 6 garlic cloves
  • –  ½ spicy pepper (ñora)
  • – 1 chilli pepper
  • –  300g of grass pea
  • 2 L of mineral water
  • – Extra virgin olive oil

To go with

  • – 75 g fried bread
  • – 100 g of chopped ham
  • – 150g of chopped chorizo
  • – Fresh herbs(basil, mint)

Preparation:

Coocked the garlic in the olive oil together with the spicy pepper and the chilli pepper. Once golden, remove the oil and add the bacon and chorizo.

Remove the chorizo ​​and the bacon and reserve its oil, to which will add the grass pea that will fry for 7 min. Then add 3 liters of water, paprika and the ingredients that we had previously fried and extracted from the oil: garlic, chilli, ñora, chorizo ​​and bacon. We cook everything together for 10 min. Strain and then go to a siphon with a load and we keep it hot to serve.

To finish:

In a deep dish, add the mush and then the rest of the ingredients: ham, chorizo, bread and finally the herbs to give a fresh touch.

Eggs With Ham 21st Century

40 min.

Ingredients:

  • 100 g chopped ham
  • 300 g of egg yolks
  • 5 g salt
  • 250 g of baked potatoes
  • 70 g of cream
  • 60 g of olive oil
  • 75 g water
  • Salt and pepper

Preparation:

Cook the egg yolks in the oven at 65 ° C for about 40 min and reserve. We keep the eggshells that we will use for plating.

For the potato foam, add the cooked potatoes, cream and olive oil in the Thermomix. Mix and add everything into a siphon to get the foam.

To Finish:

In a deep dish, fill the base with salt, over it we place the egg shell as a dish and fill it with potato foam. Then add the yolk on top and finish adding the chopped ham.

Rice With Pork Ribs

50 min.

Ingredients:

  • – 250 g of vialone rice nano size
  • – 2 garlic cloves
  • – 2 onions
  • – 50g of chorizo
  • – ½ aubergine
  • – ½ red pepper
  • – ½ green pepper
  • 200 g pork ribs
  • 300 g fried tomato
  • Sweet prapika
  • 100 ml white wine
  • 1 bay leaf
  • Colourant
  • Olive oil
  • Salt and pepper

Preparation:

Fry lightly the garlic with the chorizo and the bay leaf. When it is lightly fried, add the onion and then the aubergine. Later add the green and red peppers.

On the other hand, fry lightly  the the ribs with salt and pepper. Once this is done, add it to the sauté. After frying lightly, add the sweet paprika and the white wine until reduced. Then add the fried tomato and colourant. Then  add the rice and wet with broth to later let it rest 15 minutes.

To Finish:

To finish bake the ricein the oven for 3 min at 200 ° C. Serve in a bowl with a piece of rib on top and a little chive.

Ham Tartar and Emulsified Vinaigrette

30 min.

Ingredients:

  • – 400g of ham center
  • – 20g of rocket sprouts
  • – 20g of wakame seaweed

For The Emulsified Vinaigrette

  • – 100ml de aceite de oliva del 0,4
  • – 50ml de miel
  • – 25ml de vinagre de jerez
  • – Sal

Preparation:

Chop the ham in 1 cm cubes and reserve. Clean the seaweed and the rocket by submerging them in water and reserve.

To prepare the emulsified vinaigrette, heat the vinegar and honey until it is homogeneous and assemble the oil. Season to taste.

To Finish:

Mix the ham with the vinaigrette, and with the help of a circular mold of about 5 cm  place it. To decorate put the rocket sprouts and the seaweed on top.

Pork With Tomatoe

45 min.

Ingredients:

  • – 600 g of pork meat
  • – 2 green peppers
  • – 1 tsp Soy sauce
  • – 400 g of crushed tomatoes
  • – ½ onion
  • – Olive oil
  • – Fresh pepper
  • – Salt

Preparation:

Cut the peppers, the onion and chop the meat into very small pieces. Put a pan on the fire with a dash of oil. When it takes temperature, add the onion to poach it to slow fire, during 2 or 3 minutes.

Add the pepper and fry until both ingredients softened. Then, add the meat and season.

When the color changes, pour the tomatoes, the soy sauce and a bit of salt. Keep it cooking  until sauce reduces, and remove from heat.

Stewed Pork Meat

150 min.

Ingredients:

  • – 600 g of pork meat
  • – 4 garlic cloves
  • – 4 mature tomatoes
  • – 1 can of peas
  • – 1 pepper
  • – 1 onion
  • – A glass of white wine
  • – 1 tsp paprika
  • – Olive oil
  • – Salt

Preparation:

Peel the cloves of garlic, peel the tomatoes and grate them, and cut the onion and pepper. Chop the meat in cubes.

Put a pot on the fire with a bit of oil. When it is hot, add the pepper and the onion and poach until they soften and then  add the tomato and garlic.

Keep it on fire for 5 more minutes and add the meat. Fry lightly and add the paprika. Stir, add the wine, cover everything with water and add salt. Cook over high heat until it breaks to boil and, at that time, continue cooking over low heat for 2 hours, or until the meat is very soft. About 5 minutes before the cooking is complete, add the peas.

Canons And Bacon Salad In Modena Vigar

Ingredients:

  • – Lamb´s lettuce
  • – Fresh cheese
  • – Bacon
  • – Sweet corn
  • – Modena vinegar
  • – Cherry tomatoes
  • – This salad allows you to add any ingredient such as croutons, avocado …

Preparation:

Cut the bacon into dices or strips. Then cook the bacon a couple of minutes in the microwave and let cool. Instead of the microwave you can also go through the pan.

Put clean lamb´s lettuce in a salad bowl and toss the corn, cherry tomatoes and the pieces of bacon. Stir and add the fresh cheese cutted into cubes. Pour a dash of Modena vinegar and salt, and stir.

Ready.  Healthy and easy!

Roasted Pork Sirloin Steak With Apple

Ingredients:

  • – Pork sirloin steak (800g)
  • – 1 kg of apples
  • – Virgin olive oil
  • – 1 tbsp  thyme
  • – 1 tbsp  rosemary
  • – Salt and pepper

Preparation:

Season the sirloin and place it in a baking dish. Add a little bit of oil, rosemary and thyme and smear the sirloin well in the mixture.

Put the meat in the oven at a high temperature for 10-15 minutes in the oven. On the other hand, peel and chop the apples into slices.

When the sirloin is well done, place the apples on top and put it back in the oven for 15-20 more minutes.

Ham, Cheese and Spinach Pie

Ingredients:

    • – Grated cheese
    • – Cream cheese
    • – Ricotta cheese
    • – Cooked ham
    • – Spinach
    • – 1 tsp Tabasco
    • – 2 eggs

Preparation:

Pour the ricotta, ham, cheese, a small dash of tabasco, cream cheese, spinach and two eggs into a bowl. Mix everything until there is only one dough.

On a cake dough and prepared in its container, spread the dough on it. Cover them with another layer of dough and seal the edges. Next brush with raw egg.

Bake 40 minutes at 180°.
